General Salsa Making Tip: The cooking of salsa is pretty basic. You simply add the ingredients to your salsa in a small sauce pan, and set it on high. Bring it to a boil, then reduce heat to low. Allow the salsa to simmer for a while. The length of time depends on how you like your salsa.

Ancho Salsa

4 ancho Chiles -- dried
1 cup orange juice
2 red peppers -- roasted and peeled
1 clove garlic
1 teaspoon Salt

Soak ancho peppers in hot water for 15 minutes. Place ancho peppers, orange juice, bell peppers, garlic and salt in food processor and process for 2 minutes. Serve over grilled chicken or fish.

May be served with chips.
