General Salsa Making Tip: For a thicker consistency of your salsa, after you have brought your salsa to a boil, let it simmer for longer than normal. Be sure to keep a close eye on it and stir it often.

New Mexico Sippin Sauce

6-8 ripe roma tomatoes
2 cloves of garlic
juice of 1/4 lemon
salt and pepper to taste
1/4 spanish onion chopped
2 green chili peppers (chopped, include seeds,)
small handful of cilantro (roughly chopped)
1 jalapeno (sometimes I like my salsa with more of a bit to it)

I first chop the tomatoes up rather course. I then add the salt and pepper, garlic and cilantro.

After mixing these ingredients, I then add the peppers, one at a time, chopping a little between each pepper. I then add the onion and lemon juice, mixing thoroughly.

Remove the salsa mix and place in a stainless steel mixing bowl. Let stand for about 30 minutes to let the juices mix.

Salsa Tip: You can make a chunky salsa recipe with a thick or thin sauce, but it is easier with the thin. The less cook time, the more chunky this salsa recipe will be.
