General Salsa Making Tip: The cooking of salsa is pretty basic. You simply add the ingredients to your salsa in a small sauce pan, and set it on high. Bring it to a boil, then reduce heat to low. Allow the salsa to simmer for a while. The length of time depends on how you like your salsa.

Tongue Stripper

6 large fresh (not canned) jalepenos (thats about one cup, diced)
8 medium tomatoes (just about 5 cups chopped)
1/2 of a large onion (about 1 cup, minced)
1/8 cup <1.5 Tbl spoons> olive oil
1/8 cup<1.5 Tbl spoons> red wine vinegar
1/2 clove minced garlic
1/8 cup sugar
1 Tbl spoon salt
Juice from 1/2 of a Lime
Juice from 1/2 of a lemon
Chemists goggles, rubber gloves

Put on gloves and goggles (optional)

Do all of your chopping and mincing put your tomatoes, onions, jalepenos, garlic, sugar, salt, oil, vinegar, lime juice, lemon juice, and spoon that you are going to stir with in a pot.

Simmer and stir occasionally for about 25 minutes.

Drain the excess juice.

Chill your salsa in the refrigerator.

Salsa Tip: For milder salsa, leave out the Chili Pepper and one Jalapeno from the basic recipe and put in more green pepper or onion.
